Sublime Dining was founded, back in 2006 at the legendary ski station Chamonix. Chef & patron Simon Sutcliffe began catering to a higher end chalet clientele that demanded a finer touch to their ski holidays. Over the next 15 years he moved on to villas and super yachts worldwide, whilst also furthering his experience in London and the French Michelin restaurant scene.
This worldwide mix has enabled an understanding of global food culture, but more so, has opened up contacts across the world to magnificent chefs, produce and techniques.
As, typically, life moves on, he found a home in Dublin and has built on his expertise, using Irelands wonderful produce and talent to do what he loves most - serve outstanding food, with style.
